Steel-Cut Oats with Allspice and Maple Syrup

You can make this recipe the night before. Reserve one cup of the water, bringing the mixture to a boil. Remove from heat and cover and allow to sit on stove overnight. Add the final cup of water the next morning, bring to a simmer, and cook about 10 minutes or until ready. If you like, you can substitute some of the water with milk or an alternative milk of your choice such as almond milk. A drizzle of tahini is also a worthy addition to oatmeal.

2 tablespoons salted butter
1½ cups steel-cut oats
½ teaspoon ground allspice
5 ½ cups water
½ cup dried apples, chopped
½ teaspoon kosher salt
Maple syrup, to serve
Milk or cream, to serve

In a large saucepan, melt the butter. Add the allspice and cook until fragrant, about 30 seconds. Stir in the oats and cook for 5 minutes, stirring often. Stir in the water, apples and salt. Cover, bring to a simmer over medium, then cook for 20 to 30 minutes, or until done.
